What is “Sattvic”?
Cultivating the qualities of: calmness, pleasantness, kindness, compassion, empathy, gratitude, humility, pursuing knowledge, wisdom, courage, honor, tolerance, patience, appreciation and love.
Sattvic diet
Ayurveda created the Sattvic diet 5000 years ago to support and promote the sattvic qualities of the mind: attaining balance, harmony and bliss through spiritual practice and sustaining mental, emotional and physical wellbeing.
What does a Sattvic diet consist of?
- Food Taste: All 6 tastes of sweet, salty, sour, pungent, bitter, astringent; in appropriate amount, seasonal, organic, freshly cooked
- Food Quality: All 20 qualities of heavy, light, dry, oily, heat, cold, etc. in balance, overall promoting clarity, subtlety, warm, soft, smooth.
- Cooking technique: Easy to cook and easy to digest, versatile combinations

Sattvic Foods
- Vegetables: all colors, fresh and organic.
- Grains: red rice, wild rice, basmati rice, quinoa, barley, ragi, couscous
- Lentils: yellow gram, green gram, red gram, horse gram, black gram, mixed grams
- Beans: red and black kidney chickpeas, green and yellow peas, soy, lima, pinto, navy , fava
- Fats: ghee, olive oil, coconut oil, mustard oil, sesame oil, tahini, peanut
- Sugar: honey, jaggery, raw cane sugar, dates, raisins, maple syrup, agave
- Salt and minerals: himalayan pink salt, sea salt
- Drinks: herbal teas, spice teas, red and white wines, lassi

Vaidya Anita Misra earned her Bachelors in Ayurvedic Medicine and Surgery in India and a MS in Maharishi Ayurveda and Integrative Medicine at Maharishi International University (MIU). For over 2 decades, she worked as an Ayurvedic health practitioner in India. Currently, she is an Adjunct Professor in the Physiology and Health Department at MIU.
