
What Ayurveda speaks on red rice
It is unctuous and Tridosha Balancing. Which ensures all 7-tissue nutrition. It is recommended to eat red rice which has been harvested and stored for at least 12 months. Which means you harvest this year and eat that rice next year. This is also known as aged rice.
What modern medicine speaks on red rice
It has a great source of fiber, as it contains bran, one feels satiated for a longer period, eases bowel movement, helps to reduce cholesterol levels, reduces fatigue. And has a low glycemic index, which means glucose is released slowly into the blood thereby easy on the pancreas release of insulin. Having food prepared with rice bran protects your body against diseases and infections. Inflammation can cause diseases like heart problems, cancer, and diabetes. Reports suggest that rice bran has anti-inflammatory properties due to its potent bioactive compounds, including gamma oryzanol and ferulic acid. Rice bran can be considered as a superfood, due to its high content of polyunsaturated fatty acids. It is also a good source of high-quality plant-based protein with high digestibility and hypo allergenicity.
Tribal knowledge on red rice
Rice bran is used as a probiotic by many indigenous cultures as it contains dietary fiber that have a potency as prebiotic and fermented by probiotic in colon to produce lactic acid and short chain fatty acid (SCFA). During the three-day fermentation process, rice bran has the highest Vitamin B12 production.
Ingredients for Red Cumin Rice & Peas
- Red rice 1 cup
- Water 3 cups
- Frozen peas 1 cup
- Cumin seeds 1 tsp
- Ghee 1 TBSP
- Black Pepper 1 tsp
Optional:
- Fresh Coriander leaves: handful
- Lemon juice: ½ lemon squeeze
Method to cook red rice
- Step 1: Soaked Bran rice for 30 mins – 1 hour. Rinse, add 3 cups water to rice cooker. Add salt and ghee.
- Step 2: Heat a pan, warm the ghee, add cumin seeds, sauté till it is brown.
- Step 3: Add frozen peas. Keep stirring and covering it.
- Step 4: Add the cooked bran rice to the cooked frozen peas.
- Step 5: Add coriander leaves, black pepper, and lemon juice.
Serve: Red rice with Green Papaya & Green moong curry
